Recipe: Baked Salmon with warm potato salad

A simple meal of baked salmon with a warm potato salad that’s delicious and satisfying.

To make the potato salad, cook a small packet of new potatoes (500g) in generously salted water. Drain and when cool enough to handle, slice any in half that are particularly big.

In a large bowl, add a big dollop of full-fat mayonnaise, the zest and juice of a lemon, 2 tbsp capers, a big handful of chopped parsley and dill, and a small handful of mixed seeds or chopped nuts (like walnuts or almonds). Mix thoroughly and season with salt and pepper.

Serve with baked salmon fillets (any protein would be nice with this) and some additional green veggies.
