Recipe: Simple chicken miso ramen

Ingredients — Serves 2

  • 2 chicken breasts, tenderised and flattened a bit using a meat mallet

  • 1 litre of water

  • packet of bok choi

  • packet of sugarsnap peas

  • bamboo shoots

  • 2 tbsp miso ramen paste

  • rice noodles

  • chilli flakes, soy sauce & sesame oil to serve

Method

On a medium heat, fry the chicken until golden on each side. Cook the rice noodles per instruction and put them in serving bowls, ready for later.

In a medium sized pot, bring the water and miso ramen paste to the boil and add the veggies, bamboo shoots and cooked chicken. Simmer on a medium heat for 5 minutes. Taste and adjust seasoning. Take the chicken breast out and slice it. Ladle the veg on top of the rice noodles and serve with chicken.

Add chilli flakes, soy sauce and sesame oil to serve.
