Hot smoked salmon pasta with creme fraiche, feta & broccoli & dill

A quick and easy dinner that’s perfect after a busy, active day.

Ingredients:

120g lentil or chickpea pasta

2 hot smoked salmon fillets

1 cup of peas

200g tenderstem broccoli cut into small-ish pieces

small handful of chopped fresh dill

2 tsp chilli flakes

zest and juice of 1 lemon

100g creme fraiche

60g feta

toasted flaked almonds or pine nuts for some crunch

Method

Bring a pot of water to the boil and salt generously. Add the pasta and cook until you have four minutes left — add the broccoli and peas.

Drain and add back to the pan. Stir through the chilli flakes, creme fraiche and lemon. Flake in the salmon. Gently stir together, taste and season with salt and black pepper. Serve in bowls with the feta, dill and toasted nuts scattered on top. And maybe an extra squeeze of lemon too.
